By using suitable biocatalytic digestions, the apple pomace becomes a growth substrate for fungi that produce an edible and food-technologically usable fungal mycelium. This high-quality and vegan protein source can then be used in a variety of ways in the food industry.<\/span><\/div>\n<div><\/div>\n<div><span lang=\"DE\" style=\"font-size: 12pt;\">After successful development of this novel technology, a perspective transfer to other waste products from the agricultural and food industry for the production of innovative protein alternatives is conceivable. The knowledge gained in this project offers the possibility of opening up a sustainable value chain with considerable market potential.
