Verbundpartner sind die Food and Pharma Services Anklam (FPS) GmbH, die Lassaner Fruchts\u00e4fte Mosterei Nowack GbR, das Zentrum f\u00fcr Ern\u00e4hrung und Lebensmitteltechnologie (ZELT) gGmbH\u00a0in Neubrandenburg<\/span><span lang=\"DE\">\u00a0und die Enzymicals AG in Greifswald.<\/span><b><\/b><span lang=\"DE\"><br \/>\n<\/span><\/div>\n<div><span lang=\"DE\">The overall objective of the project is to utilize the by-product from apple juice production - apple pomace - in a holistic and ecologically sustainable way for the production of a vegan protein source for human nutrition through biotechnological cultivation of selected fungi (basidomycetes). By using suitable biocatalytic digestions, the apple pomace becomes a growth substrate for fungi that produce an edible and food-technologically usable fungal mycelium. This high-quality and vegan protein source can then be used in a variety of ways in the food industry.<\/span><\/div>\n<div><span lang=\"DE\">After successful development of this novel technology, a perspective transfer to other waste products from the agricultural and food industry for the production of innovative protein alternatives is conceivable. The knowledge gained in this project offers the possibility of opening up a sustainable value chain with considerable market potential.
