APPLE: APfel-basiertes PiLzmyzEl
The joint project APPLE - "Processing and Preparation of Organic Apple Pomace for the Production of Alternative High-Quality Protein Sources" - combines the competences of local companies in the Western Pomerania region to develop a future strategy for the production of alternative and high-quality protein sources from by-products of the food industry that have so far been unused and disposed of at a cost.
The overall objective of the project is to utilize the by-product from apple juice production - apple pomace - in a holistic and ecologically sustainable way for the production of a vegan protein source for human nutrition through biotechnological cultivation of selected fungi (basidomycetes). By using suitable biocatalytic digestions, the apple pomace becomes a growth substrate for fungi that produce an edible and food-technologically usable fungal mycelium. This high-quality and vegan protein source can then be used in a variety of ways in the food industry.
After successful development of this novel technology, a perspective transfer to other waste products from the agricultural and food industry for the production of innovative protein alternatives is conceivable. The knowledge gained in this project offers the possibility of opening up a sustainable value chain with considerable market potential. In summary, this research project achieves an ecologically sensible added value through the utilization of residual materials and creates an organic link between economic efficiency and ecology.
The joint partners are Food and Pharma Services Anklam (FPS) GmbH, Lassaner Fruchtsäfte Mosterei Nowack GbR and the Zentrum für Ernährung und Lebensmitteltechnologie (ZELT) gGmbH in Neubrandenburg.
